Шато д‘Есклан или „виното на Шатото“ е специален продукт за избата. Гроздоберът се осъществява от изгрев до обяд, с цел запазване всички качества на гроздето. След ронкането, зърната са контролирани от „механично око“, което изхвърля лошите зърна. По-голямата част от виното идва от „самоток“, свободно изтекъл сок и съвсем лека преса за останалата част. Липсва мацерация.
