Рипасо е вино като никое друго. На първо място цялото грозде, от което се прави е отгледано спазвайки изцяло органични практики. На второ място, и тук е магията, това е вино, което ферментира два пъти. Вече готовата Валполичела се смесва с ципите от пресовано и използвано за Амароне сушено грозде. Мацерацията или престоя на ципите с виното е за 5 дни. Следват 12 месеца отлежаване във френски дъбови бъчви от Алие.
